If you’re having fresh flowers on your cake, then the seasons will absolutely make a difference to the varieties of flowers available for your wedding – Peonies, for example, are only available for a short period of time (early May through to end of June) so you’d be unlikely to have them for an October wedding, Sunflowers would be unavailable for a March wedding…… you get my drift!! Handmade sugar flowers are available all year round though and are not subject to droughts or very wet weather, which can also make a difference to the kind of flowers around at any given date.

Why not use a seasonal theme to tailor your cake flavours on your big day? For a summer wedding, how about “Strawberry and Prosecco”, “Elderflower and Lemon” or “Cherry and Almond”? Moving into winter, why not make the most of those gorgeous spices around? You could have “Ginger and Pear”,  “Carrot, pecan and cinnamon”, “Sticky Toffee” or go fruity with “Cranberry and Orange”? Mix and match with more traditional flavours if you like, most couples go for a different flavour for each tier, giving their guests a difficult choice of which delicious piece to pick!!

When considering the style of cake you would like for your occasion, think about where it will go – for example, on a hot summers day, a fully buttercreamed cake will be super happy in a nice, air conditioned hotel,…….. in a baking hot marquee………..not so much!!

If you are having a marquee reception, consider having a cake that is ganached and iced, which will stand a greater amount of warmth, and get the cake cut early!! Or maybe opt for a dessert table, with macaron, cookies, donuts, brownies, etc that can be brought out later in the day.

Don’t be afraid to get some colour on your cake……it totally doesn’t have to be white! Winter weddings can go bold with gorgeous deep reds and greens, and if you like a bit of sparkle, you can totally add some edible gold leaf into the mix. Autumn colours can absolutely be incorporated into your design, those orange, reds and browns can be utilised in both florals and foliage.
